This is one of my favorite recipes. I’ve shared it a lot on my instagram and I do it at least once a week. It is a good source of protein and you can have left overs during the week. I like cooking food that is easy to take with me and heat up, when going to work, I also don’t need to worry about cooking every single day.
So here we go..
can of tomatoes (no added sugar) or fresh sliced
can of coconut milk
750 ml water mixed with three table spoons vegetable broth
250 grams red lentils
You start by mincing the onion, sauté in a pot for 2 minutes in olive oil. Add the can of tomatoes or your freshly sliced ones, also add coconut milk, vegetable broth and lentils. Let all of this cook 35-40 min. on medium heat, depending on how cooked you like the lentils and the consistency of the soup. Lastly, add one tea spoon of cumin and cayenne pepper for seasoning, if you like more add more. Your lentil soup is all done and ready to serve.
