This is one of my favorite recipes it is sooo easy and I like it easy! 🙂 I shared it already on Instagram but here it is safe for you to look up. I love this recipe because I always get to eat it for two more days and don’t need to worry what to cook or prepare for lunch. This is also perfect to take with you to work.
one medium onion
1 can of tomatoes or freshly cut
1 can of coconut milk
750 ml vegetable broth
250 g lentils
Start with dicing your onions and sauté for 2 minutes in a pot with a little olive oil. Add tomatoes, coconut milk, vegetable broth and lentils. Now, let all of this cook for 35.40 min. depending on how you like the lentils to be. For a more soft and smooth consistency cook a little longer. After 40 min. take off the stove and add some cayenne pepper and turmeric for seasoning – enjoy!
